  • Scratch & Co is looking for a General Manager to ensure that the everyday activities of the Scratch & Co restaurant run smoothly, positioning Scratch & Co for measured but robust growth through the remainder of 2023 and into 2024, as a first-in-class neighborhood restaurant with strong destination dining appeal.

    Key duties include:

    • Overseeing the day-to-day full service, to go, event, and catering operations of the Scratch & Co restaurant, including oversight of the bar and cafe

    • Overseeing all Guest Relations processes and communications

    • Liaising with the Scratch & Co Bookkeeper, Payroll Company, Third Party Food Delivery Services, and (toast) Point of Sale Company

    • Enforcing and establishing company policy and procedure, and adhering to all laws and regulations

    • Providing all needed reports and assisting other management and staff in goal setting to accommodate current and projected sales, and forecasted industry trends

    • Managing labor, including especially staff development in each department (and assuring Scratch & Co is taking a lead position with respect to labor-forward work environments), daily labor reporting, schedule writing, and forecasting

    • Creating and implementing operational strategies to minimize loss, and maximize productivity while always augmenting staff autonomy

    • Social Media content sourcing

    • Operations feedback to the Director of Operations and the Owner

    The General Manager needs to be a leader of the first degree, and must thereby demonstrate on-the-job competency, a listening-first disposition, the ability to give individualized consideration to staff, while holding each accountable to Scratch & Co’s overall evolution and continuous improvement.

    Skills and Requirements:

    • Excellent computer skills including the ability to analyze business data to identify revenue and cost-saving opportunities and operational improvements via POS reports, and sales tracking spreadsheets

    • Expertise in liaising (or oversee those who do) with a multitude of business partners and vendors, from marketing to waste management, and an on-site owner

    • Ability to utilize dashboards/scorecards/KPIs to drive performance

    • Ability to communicate to the owner regarding executive-level concerns and opportunities

    • Ability to communicate with staff, articulating the Scratch & CO vision and gaining traction easily among staff to bring Scratch & Co closer to our operating and strategic goals

    • Expert-level knowledge of each product and service Scratch & Co produces, including especially food, old and new world wines, beer, coffee

    Education and Training Requirements:

    The ideal candidate will have a minimum of 4 years of progressive management experience (with at least two of those years in a fine dining establishment) in a reputable restaurant of at least 25 staff with sales in excess of $2,000,000, demonstrating continued upward mobility and the ability to tackle new and unfamiliar work that results in the fulfillment of operational goals.

    Job Type:

    The General Manager position is full time and exempt from overtime compensation.

    Hours and Schedule:

    The position requires the incumbent to work between 50-60 hours per week for the first three months, depending on any number of special projects being undertaken at the time. Following this initial 90 days, it is expected that the General Manager will work between 40 and 50 hours per week, pending competent staffing levels remain between 100% and 110% of restaurant needs.

    The General Manager must be available all shifts and all dayparts. They will set their schedule with the support of the owner and Director of Operations.

    Compensation:

    Base Salary for a qualified candidate is $70,000 per year. Bonus opportunities based on restaurant performance are available.

  • Scratch & Co is looking for chefs. Every professional cook at Scratch & Co is treated as a Chef. Each chef is invested in so that their time with us is beneficial to them in a way that carries forward in their career. Each chef is called “Chef” by the Scratch & Co staff and owner.

    The Scratch & Co kitchen is equipped with new and expanding hotline equipment. Our chefs are compensated well, giving them the freedom to work for decent pay in addition to working for the sake of their own joy. This means that working at Scratch & Co allows our chefs to actively improve their profession through their labor, in general.

    Incoming chefs will join the team to assist the Chef Partner in: assuring the kitchen prepares and cooks foods using approved recipes; maintaining the general upkeep and readiness of the kitchen footprint at all times, and maintaining all cost and food safety controls for the menus.

    Chefs will be managed to develop their skill sets and to gain the training needed in areas of kitchen operations and management that are often occluded from other professional cooks. Key duties and responsibilities include:

    • Managing Prep List completion, daily

    • Managing cleaning protocols, daily, weekly, and monthly

    • Assisting in special menu item, and seasonal menu development

    • Stocking and set up of the kitchen for service, daily

    • Preparing foods, including cleaning and cutting and cooking of batch items to be included in side dishes, main dishes, desserts, and specials

    • Assuring that guest orders are completed in a timely manner and to approved specification

    • Cleaning all preparatory and cooking areas in the restaurant throughout and at the end of each shift

    • Assisting all staff in assuring food safety by following protocols related to the S&Co HACCP plan, including but limited to ordering receiving, storage, cooking, cooling, reheating, hot holding, and food disposal logs

    • Communicating with all Chefs, FOH Staff, and Managing Member clearly and consistently with respect to all issues affecting your own and the restaurant’s performance, both positive and negative.

    • Making a point to make someone’s day, every shift

    Skills:

    • Proven cooking experience, including previous experience as a professional cook in a busy kitchen, through to a excellent close

    • An understanding of various cooking methods utilized in our Weekday and Weekend Brunch and New American Dinner menus, and a clear track record of understanding what cooking methods are not understood so that they can be learned if needed

    • Accuracy and speed in executing a wide variety of assigned tasks

    • Ability to prioritize tasks to the restaurant’s benefit

    • Familiarity with industry best practices

    • Specialized skill sets (butchery, shelf stabilizing foods, smoking / BBQ) will be given greater consideration

    Job Type/s: Full Time / Part Time – we are happy to hire part time talent

    Pay: At current sales volume, Chefs at Scratch earn an average between $24 and $26 per hour, after our whole house tip pool is factored. As sales increase, so to do opportunities for pay increases. Opportunities are being developed for performance-based bonus compensation.

    Schedule:

    All shifts and all day parts. Must be available for PM weekend services. The Scratch kitchen hosts pop up dinners Monday-Wednesday Evenings. We host our own dinner services Thursday – Sunday evening. We serve brunch daily. Open availability is preferred.

  • Front of House

    Scratch & Co is looking for servers to ensure that the everyday activities of the Scratch & Co cafe run smoothly, that the cafe food and beverage program, bar program, and kitchen programs are well represented to our guests in the restaurant.

    Servers are responsible for following S&Co protocols and steps of service, and to attend to all running and closing sidework to support their peers and incoming staff.

    Skills and Requirements:

    · Adept management of a four to six table section, following all steps of service, including wine service

    · Ability to switch into support roles (host, serving assistance)

    Education and Training Requirements

    · The ideal candidate will have a minimum of 2 years of service industry experience, at a full-service restaurant. Experience in a café is a plus, as we are open for a robust morning and brunch service, daily.

    In order to work in the front of the house at S&Co, a staff must be available to work a minimum of three shifts per week, with two of those shifts occurring between Friday and Sunday night, and at least one shift during the week.
